Well, I thought, there is an 'unpotato salad' recipe that could just fit the bill ... read on and find out more, and I think you could be so surprised - this is amazingly like potato salad - some people take two or three bites before they figure out it’s not potatoes! This is modelled on the old-school picnic favourite, using hard boiled eggs, just like my dear mum used to make 😊
This side dish also works well as an accompaniment for both meat and fish dishes.

1 large head cauliflower, cut into small chunks
2 cups (240 g) diced celery
1 cup (160 g) diced red onion
2 cups (450 g) mayonnaise
1/4 cup (60 ml) cider vinegar
2 teaspoons sea salt
1/2 teaspoon ground black pepper
12 drops liquid stevia sweetener (plain)
4 hard-boiled eggs, chopped
Method
1. Put the cauliflower in microwavable casserole dish, add just a tablespoon (15 ml) or so of water, and cover. Cook it on high for 7 minutes, and let it sit, covered, for another 3 to 5 minutes. You want your cauliflower tender, but not mushy. (And you may steam it on the stove top, if you prefer.)
2. Use the time while the cauliflower cooks to dice your celery and onion.
3. Drain the cooked cauliflower and combine it with the celery and onion in a really big bowl.
4. In a separate bowl, combine the mayonnaise, vinegar, salt, pepper, and stevia. Pour the mixture over the vegetables and mix well. Mix in the chopped eggs last, and only stir lightly to preserve some small hunks of yolk.
5. Chill and serve.

Jan, I want to tell you that many people do not prepare cauliflower due to the smell when cooking it. One method to avoid this is to boil it with the lid off. Cauliflower contains sulfur compounds that can produce a strong smell when cooked. However, when the pot is uncovered, these compounds evaporate more easily and do not concentrate in the steam inside the pot, which reduces the intensity of the smell.

Yes, this recipe could be made with omitting the stevia, in fact there are other recipes on the internet that do not use sweetener. The stevia just adds a little sweetness that some may prefer.

Aquà se acostumbra mucho a hacer ensaladilla. Se cuece las patatas en dados pequeños y una vez frÃa, se le añade tiras de pimientos asados, daditos de zanahorias cocida,unas gambas o langostinos pelados, huevo duro picado y mayonesa. Se sirve frÃa. Es un plato muy bueno para el verano.

I have made a similar salad for many years and people love it. I don't add any sweetener, and add chopped dill pickle and mustard to the mix. Also use half mayo and half yogurt in the dressing.
Soon salad season will be here again! Unfortunately, I've not eaten cauliflower for several months as it all comes from the USA and many Canadians are not purchasing US produce. I miss cauliflower and sweet potatoes, that's all.

Here, it's common to make potato salad. Dice the potatoes and, once cold, add strips of roasted peppers, diced cooked carrots, some peeled shrimp or prawns, chopped hard-boiled eggs, and mayonnaise. It's served cold. It's a great summer dish.
Great idea. Mr. M. can't eat potatoes due to his kidney. So this is a good substitute.
It does look good but I think I'll have to pass on this one.
I also try to limit potato intake to keep my carbs low and this sounds delicious! I will try it this summer during barbecue season.
I never have liked potato salad so that is not something I miss, but I did make my own coleslaw that is low carb that we like so that has been nice

I love that you do what your mum used to do. I never had eggs in potato salad. Or, I don't think I have. Interesting to use the cauli. That big veg is such a wonderful treat. I never thought about using it to swap out spuds.
