What a great start to the day a Cheesy Mushroom Omelette is!
So quick, easy and nutritious, it's a winner for me.
Ingredients
1 tbsp. olive oil
handful button or chestnut mushrooms, sliced
25g cheddar cheese, grated
small handful parsley leaves, roughly chopped
2 eggs, beaten
Method
1. Heat the olive oil in a small non-stick frying pan. Tip in the mushrooms and fry over a high heat, stirring occasionally for 2-3 mins until golden. Lift out of the pan into a bowl and mix with the cheese and parsley.
2. Place the pan back on the heat and swirl the eggs into it. Cook for 1 min or until set to your liking, swirling with a fork now and again.
3. Spoon the mushroom mix over one half of the omelette. Using a spatula or palette knife, flip the omelette over to cover the mushrooms. Cook for a few moments more, lift onto a plate and eat by itself (or perhaps with a nice salad).

And it's a winner for me too.
: )
I love Omelets- I think they are full of protein and tastes good too.
Love eggs at any time!
For my omelettes I usually mix the cheese and parsley into the eggs while the onion or mushrooms are warming, then add the egg mixture and allow to set, before flipping for a few sconds then serve. Sometimes I add finely diced capsicum instead of mushrooms. Spinach too if I have any.
I love making omelets myself, either using my own recipes or following recipes from cookbooks. They always turn out super delicious
I like the omelet too, but this recipe is great for lunch; I’ll definitely make it once I head to the weekly market and buy some eggs.
hugs Elke
Omelettes are a great favourite as they are so quick and easy to make. Favourite would be tomato and mushroom.
I love omelettes. I like green chilies, onions, and cheese. I use butter instead of oil to coat the pan.
That looks good Jan.

Any time is "Omelette Time" for me.
Hi Jan! I love Omelets !!As a true Spaniard, I love a potato omelet with onion—and what we call a "French-style" omelet (a plain folded omelet). You can fill them with things like tuna, ham and cheese, shrimp, or asparagus—it’s all down to your personal taste. Regards from Madrid
Omelettes are such a great dish because there are so many things you can add to them. Delicious!
I wanted to buy eggs anyway and I LOVE omelette and mushrooms, and I have a quarter onion!
